In hiking mode, is there a way to make the route pass where no OSM trails exist?

In other words, is it possible to switch to some manual mode to add waypoints in high mountain rocky areas?

Yes, you can use the “skip segments” option, which returns a bee‑line route between two consecutive waypoints. This feature can be activated in the web map client by selecting the <...> symbol on the right‑hand side of a given waypoint.
