I would like to know if and how, using the maps available on the website openrouteservice.org, I can create routes without a left-turns. If possible simply from the browser, not using the API.

this is not supported by neither the API nor the map applications.
we adhere to existing restrictions, but there is currently no way to disable left-turns. You can add an issue with a feature request in our repository or contribute with a pull request.
